Out of work and my grandson has his first baseball get together (scrimmage). Can’t miss that so I need something quick for dinner?? I found this awesome canned tuna the other day: SustainableSeas packed in water, no salt added and no other additives!! Also 100% pole caught. So I did up my avocado mix added the tuna and had it on romaine lettuce leaves with some rice crackers. Turned out pretty good and great way to do the tuna without the bad for you mayo! I also whipped up living intentionally simple’s haystack coconut oatmeal cookies. Very interesting, no added sugar and all healthy stuff… very good !! Thank you again seraireland for the awesome recipe. I added some dried blueberries to the recipe… yum!!
Great quick dinner and snack! Off shortly to the baseball scrimmage game :-). I won’t be able to stay to long as I have to go to bed early as I will need to get up at 3:30 A to get ready for work. I’m on the breakfast detail tomorrow morning!!

Thank you again for mentioning it. I’m really glad you liked it. And it is so versatile with endless possibilities. After trying it your way with blueberries, I think I’ll do either lime & coconut or pomegranates with nuts.
