First baseball game of the season!!

Out of work and my grandson has his first baseball get together (scrimmage). Can’t miss that so I need something quick for dinner?? I found this awesome canned tuna the other day: SustainableSeas packed in water, no salt added and no other additives!! Also 100% pole caught. So I did up my avocado mix added the tuna and had it on romaine lettuce leaves with some rice crackers. Turned out pretty good and great way to do the tuna without the bad for you mayo!ย  I also whipped up living intentionally simple’s haystack coconut oatmeal cookies. Very interesting, no added sugar and all healthy stuff… very good !! Thank you again seraireland for the awesome recipe. I added some dried blueberries to the recipe… yum!!

Great quick dinner and snack! Off shortly to the baseball scrimmage game :-). I won’t be able to stay to long as I have to go to bed early as I will need to get up at 3:30 A to get ready for work. I’m on the breakfast detail tomorrow morning!!

Enjoy your evening and live your life in the moment with passion, love and kindness ๐Ÿ™‚

Great Dinner!!

Sticking with my healthy food plan tonight was organic chicken thighs baked in oven with a little olive oil, pepper and Celtic sea salt, organic wild brown rice mix and a wonderful green salad. I even made my own salad dressing with avocado, lemon juice, olive oil and balsamic vinaigrette. Right now, as I write this post, I am having warm tea made from a mix I put together of sliced lemons, fresh ginger and 100% raw honey. It is very, very good!

The next recipe I’m going to try, not tonight though as I am headed to bed soon, comes from a fellow blogger ( living intentionally simple ) who posted what looks like an awesome healthy cookie recipe (coconut oatmeal haystack cookies) that I can not wait to try. Thanks Seraireland :-).

I wish everyone a happy and healthy night ๐Ÿ™‚

To a great day!!

Cheers to a wonderful and happy day!! My morning packed power drink ๐Ÿ˜Š

Yummy!!! Fudge bites

These came out great๐Ÿ‘ they are organic Medjool dates filled with almond butter, dipped in cocoa chocolate and rolled in organic unsweetened coconut. So easy to make and soooo Delicous!! Recipe is taken from a book “rawsome vegan baking” by Emily Von Euw. Fantastic book๐Ÿ˜Š I can’t wait to try more recipes!!

A new passion !!!

Eating healthy!!! I’ve been learning a lot more lately about the healthy foods and superfoods and healthy lifestyle. It is truly amazing how what you put into your mouth and eat affects your whole well being!!ย  It makes a huge impact on how you feel, the energy you have and the health of your body! Very amazing and definitely an eye opener. I have been doing this for awhile but now I’m really getting into it in a much more detailed way. It amazes me on all the variety and different ways to make delicious and healthy meals and snacks. No excuses for not doing it…. Why wouldn’t you want to feel the best you can and still enjoy what your eating?? Once you start eating this way you really don’t want to go back to junk eating, well– maybe every once in awhile :-), but really your body doesn’t want that stuff anymore. I have been able to keep off over 30lbs for over 2.5 years now and feel pretty good. I will be 61 in July and I want to be able to have energy and do things like hike, bike and enjoy life :-). I try to read everything I can on all the creative ways to fix healthy foods and the effects they have on ones body and health. Really fun stuff !!! I’m off to go make some homemade coconut bars and fudge bites with almond butter… and for dinner, steamed broccoli and salmon…ย  yum!! This is truly become a great passion of mine and my body thanks me for it… :-)!!
